Executive Chef.

Having worked under Michelin star chefs, chef Oscar a Los Angeles native, practices a globally influenced cuisine featuring plates inspired by the Mediterranean, 'Franco-Afrique,' India and Southeast Asia constantly changing and evolving to showcase his creativity and the abundance of produce sourced from nearby farmers and markets.

VALLE DE GUADALUPE

Tucked about 15 minutes inland from the port city of Ensenada in Baja California, Valle de Guadalupe is Mexico's emerging wine growing region, responsible for 80% of mexican wine prodution. With about 100+ wineries producing world class vintages, the "Valle" (as locals like to call it), has been on the radar of every food traveler.

Cheese makers, olive oil producers, animal raising farms, organic gardens, winemakers, craft breweries, the prestigious seafood bounty of Baja waters, it is no surprise our region is a chefs dream come true.

 
The Animalón experience is the definition of my cuisine. Using only Baja ingredients, my mission is to pay homage to local producers, and the lifestyle of Baja.
